Beef and Broccoli Stir Fry

Ingredients

1 ¼ lbs thinly sliced Steak (recommend flank or sirloin)

¼ C Beef Broth + (used instead of oil to keep stuff from sticking to the pan while cooking)

2 C Broccoli Florets

2 tsp minced Garlic

2 tsp fresh minced Ginger

¼ C Oyster Sauce

1 tsp Sugar

2 tsp Toasted Sesame Oil

1 tsp Soy Sauce

1 tsp Cornstarch

Salt

This recipe makes 1 medium tray*

Directions:

  1. Heat a large skillet or wok over medium heat, add the broccoli and a little bit of broth (to keep from sticking)  and cook for 4 minutes or until tender. 
  2. Add the ginger and garlic and cook for an additional 30 seconds. Remove everything from the pan and cover. 
  3. Wipe the pan clean, turn the stove to high heat, and heat the pan. 
  4. Season the steak pieces with salt and pepper and then place in a single layer and cook for 3-4 minutes on each side until browned and cooked through. (may need batches)
  5. Add the broccoli mixture back to the pan, and cook for 2 more minutes or until warmed. 
  6. In a bowl or large measuring cup, whisk together the oyster sauce, broth, sugar, sesame oil, and soy sauce. In a small bowl mix the cornstarch with a TBSP of cold water. 
  7. Pour the oyster sauce mixture over the meat and broccoli, cook for 30 seconds, add the cornstarch and bring to a boil. Cook for 1 minute or just until the sauce starts to thicken.
  8. Cool and then spread out on parchment lined trays. 
  9. Freeze 
  10. Freeze Dry
  11. Store Appropriately (See Tips and Tricks for storage help)

Cycle Time:

24 hours

Rehydration:

Add either boiling water or beef broth a little bit at a time until and let sit a few minutes then check for tenderness and repeat until everything is rehydrated.
