10 medium potatoes made 1 large tray*
Directions:
- Cut potatoes, and put them in a pot, and boil.
- Cook until potatoes are cooked clear through
- Mash the potatoes
- Line the tray with parchment or silicone mats.
- Spread potatoes evenly over the tray being careful to not overfill trays.
- Add dividers in desired portions
- Pre-Freeze
- Freeze dry
- Store appropriately. (See Tips & Tricks for storage help)
Cycle Time:
My Cycle time in a mixed load Large Freeze Dryer with a Premier Pump was 25 hours.
Rehydration:
Add water stir, let sit, stir, add water, stir, let sit, stir until you reach desired consistency. May want to re-whip them if you want them to be perfectly smooth.
* Large Tray = 8 Cups/tray Medium = 6 Cups/Tray Small = 4 Cups/Tray
