This recipe makes about 6 cups
Directions:
- Chop the cucumber into small pieces; smaller is better
- Peel and mince the garlic cloves
- Combine all the ingredients in a bowl.
- Add parchment paper to your trays
- Spread the tzatziki sauce evenly on your trays
- Place the dividers if using. We like 40 portions for this recipe
- Pre Freeze when possible
- Freeze dry (my cycle time was 30 hours)
- Store in jars for short-term use or in mylar bags for long-term storage
Rehydration:
Add 2 divider portions or about 2 ½ tbsp of freeze-dried tzatziki to a bowl with 2 tbsp of cold water. Stir and enjoy.
